Homemade Crepes with Apricot Marmalade, Powdered Sugar and Blueberries Recipe

These homemade crepes are filled with sweet apricot marmalade, dusted with powdered sugar, and topped with fresh blueberries for a delicious breakfast.

Ingredients

Time Needed

  • Prep Time: 10 minutes
  • Cook Time: 20 minutes
  • Total Time: 30 minutes

Instructions

  • Whisk together the flour and eggs in a large mixing bowl.
  • Stir in the milk and water gradually until the batter is smooth.
  • Combine the salt and melted butter in a mixing bowl.
  • Melt butter in a lightly oiled nonstick skillet over medium-high heat.
  • Pour or scoop the batter into the pan, about 1/4 cup for each pancake.
  • Tilt the pan in a circular motion to evenly coat the surface with batter.
  • Cook for 2 minutes, or until the bottom is light brown.
  • With a spatula, loosen the pancake and flip it over to cook the other side.
  • Repeat until all of the batter is gone.
  • Place a spoonful of apricot marmalade on top of each pancake.
  • Fold each crepe into quarters and top with powdered sugar.
  • Serve with fresh blueberries on top.
